April Sun Antioxidant Fruit Smoothie

The weather in April is like an abusive relationship… bear with me… It slaps you around the head with the harshest winds, coldest days and pees it down with rain, but then the next day, showers you with glorious sunshine and loving warmth.

Today is one of those days here in Yorkshire. Every window in the apartment is wide open and I have the tower fan whirring away in the corner trying to keep everything cool. My little IKEA thermometer is reading around 30 degrees! So, what better time than for an impromptu, antioxidant fruit smoothie that takes literally moments to make. You will need:

  • 500ml Pineapple Juice
  • 1 Banana
  • 2 Kiwis
  • Mint (just a sprig)
  • Ice cubes

Making sure your blender is suitable for ice (most are); wang the whole lot in and whizz it around for 30 seconds or so, then serve. “How easy is that?” – as Barefoot Contessa would exclaim and then pour in about 3 litres of lard, sugar and chocolate, say “I love to take something ordinary and make it really special”; gathering all her gays around her for a whimsical Spring lunch with her and Geoffrey – OK, maybe I need to stop watching the Food Network.

Seriously though, this is a gorgeous smoothie, not bitter but not too sweet. People talk about smoothies being full of sugar, but remember these are natural sugars and even though in great whopping amounts will add to fat, the body processes them in a different way to refined crap so it’s much, much healthier. So enjoy!

I love that last line. People always rag on me about drinking smoothies cause of all the sugars, but some sugars are good for your body, especially when they come from fruits and vegetables.
